Potato soup is a very simple dish that can easily be adapted to personal preferences. There are countless variations of potato soup that can be prepared with different ingredients. Some potato soups are often served with sausages or bacon. My recipe for potato soup is completely vegan but still super delicious.

Potato soup is a very nutritious dish and also healthy because it contains many important nutrients such as carbohydrates, vitamins and minerals. Because of its satiating effect, potato soup is also a popular dish during a diet and rightly part of a healthy and balanced diet.

Finely dice the potato, onion and carrots.

Heat the canola oil in a pot large enough for the soup and fry the onion until translucent. Add the carrots and fry a little.

Deglaze with the vegetable stock, add the potato and the marjoram and simmer on a low heat for about 20 minutes or until the potatoes are cooked.

Remove the soup from the heat and puree with a hand blender. Puree either very finely or in chunks, depending on your taste. Add the vegan cream and the vegan sausages slices, stir briefly and season with salt and pepper to taste . Leave to rest for a while so that the sausages get warm.

Pour the soup into bowls, garnish with some chopped parsley and serve while still hot. Enjoy your meal.

2¼ lbs potatoes
4 vegan vienna sausages
3 carrots
1 onion
1 tsp marjoram
3.5 imp.fl.oz / about 100 ml vegan cream
Salt to taste
Freshly ground black pepper to taste
Parsley for garnish
2 tbsp canola oil
Optional: needles of 1-2 sprigs rosemary, finely chopped
