My recipe for this classic cucumber salad goes perfectly with hot dishes or sandwiches and can also be eaten with some bread as a snack. It’s super easy to make, fresh and delicious and the ideal side dish for all kinds of grilled dishes. Especially in summer.

I love fresh and aromatic salads. When tomatoes, cucumbers and peppers are being harvested there is nothing better but make delicious salads out of it. I prefer to eat my cucumber salad very simply with vinegar and oil, refined with fresh herbs such as Dill or chives.

This salad can actually be eaten as an accompaniment to almost any dish and due to its freshness and lightness it goes very well with hearty and spicy dishes such as Chili sin Carne, Sloppy Joe or Pasta Arrabbiata.

What ingredients do you need for your cucumber salad?

My cucumber salad recipe is very classic with vinegar and oil and only needs a few other ingredients. In addition to cucumber you only need a few fresh herbs such as dill or chives, apple cider vinegar and a high-quality extra virgin olive oil. If possible use fresh herbs for the salad as these have more flavor than dried herbs. If you can’t get fresh dill you can of course use dried one.

Prepare the cucumbers

For a good dressing you should drain the cucumber beforehand. To do this wash the cucumber and cut it unpeeled into approx. 3 mm thick slices with a kitchen slicer or a knife. Mix the cucumber slices with about half a teaspoon of salt and place it in a colander. It is best to place a bowl underneath so that the cucumber water can be caught and used later for delicious soups or smoothies. The cucumber salad should now rest for about half an hour to drain liquid out of it. You can also squeeze the cucumber slices with your hands to extract even more liquid.

Tip: Draining changes the consistency of the cucumber slices. If you like your cucumber salad to be crunchy and if you eat it right after preparation you can skip the draining part. I like to do it this way because I prefer my cucumber salad to be crunchy and firm.

How is the cucumber salad prepared?

While you’re draining the cucumber slices you can prepare the dressing. Wash ½ bunch of dill and optionally ½ bunch of chives and chop finely.

Place the drained cucumber slices in a bowl. Mix 2 tablespoons of apple cider vinegar and a pinch of sugar or honey and add it to the cucumber slices along with 2 tablespoons of olive oil. Finally season the cucumber salad with salt and pepper to taste.

Either serve the cucumber salad immediately or store it in the fridge for later.

1 cucumber
2 tbsp olive oil, extra vergin
2 tbsp apple vinegar
Info: You can also use your favorite white vinegar.
½ bunch dill
a pinch of sugar or some honey
½ bunch chives, optional

Instructions

Now let it rest for about 30 minutes so that the cucumber slices can release liquid. You can also squeeze the cucumber slices with your hands to extract even more liquid from the cucumber slices.
  2. Meanwhile wash ½ bunch of dill and optionally ½ bunch of chives and chop it finely.
  3. Put the drained cucumber slices in a bowl. Mix 2 tablespoons of apple cider vinegar and a pinch of sugar or honey and add it to the cucumber slices along with 2 tablespoons of olive oil.
  4. Mix everything very well and season the cucumber salad with salt and pepper to taste. Either serve the cucumber salad immediately or store it in the fridge for later.

Hacks and hints

The consistency of the cucumber slices changes as a result of the draining. If you like your cucumber salad to be very crunchy and eat it right after preparation you can skip draining the draining part. I like to do it this way because I prefer my cucumber salad to be crunchy and firm.
