Porridge, also known as oatmeal is made with porridge oats or rolled oats, water and a pinch of salt. The oats are cooked until they turn into a creamy mush. With a variety of different toppings porridge never gets boring at breakfast.

Porridge – A timeless classic reinvented

Some time ago, porridge was seen as a boring breakfast in Germany and therefore rarely found its way to the breakfast table. Luckily things have changed. Porridge is becoming increasingly popular these days and is now considered an extremely tasty, versatile and wholesome trend breakfast.

Porridge – where does it come from?

The principle of making a nutritious porridge from grain and liquid is literally almost as old as mankind itself. More than 12,000 years ago, the forerunners of modern grains were processed into an edible porridge by cooking. In addition to the Chinese congee made from rice (more than 4,000 years ago) and the South American cereal porridge made from quinoa, porridge as we know it today comes from Scotland.

Oats have been grown in Scotland since the late Middle Ages. It is therefore understandable that the precursor to porridge was almost exclusively consumed as a staple food by the crofters, the Scottish farmers. In the 17th century, the nutritious meal was finally given the name porridge and was considered a typical meal of British working-class families. In Scotland, porridge was eaten unsweetened as a warm breakfast, but also as lunch or dinner. The porridge was only refined with sugar for the children.

Oatmeal – healthy and delicious

Rolled oats or steel-cut oats are an optimal source of protein and are made from whole grains. As a pure whole grain product, they therefore contain a lot of fiber, a high amount of unsaturated fatty acids, vitamins B1, B6 and E, as well as the minerals magnesium, iron, calcium, zinc and phosphorus. The long-chain carbohydrates ensure long-lasting satiety and cause more energy to be burned during digestion. Oats are also rich in beta-glucan and therefore have a positive effect on human cholesterol and blood sugar levels.

How is porridge traditionally prepared?

Oatmeal is a super simple recipe and can be made in no time. Depending on which toppings you use, the preparation time can vary. In a maximum of 30 minutes, however, you should have a finished porridge on the table. Even with more unusual topping variations.

Cook the oatmeal

Cook the oats with water in a ratio of 1:3 over medium heat. With tender oat flakes, it is sufficient to let the oatmeal gently simmer for about 3 minutes while stirring constantly. If you want your porridge to be a little creamier, you can let it stand a little longer. Simply remove the pot from the stove and let it swell for a few more minutes. Rolled out oat require a longer cooking time (about 5 to 10 minutes), depending on the variety. English steel-cut oats can take 15 to 30 minutes to cook. Since oat flakes can be eaten at any cooking level, it is purely a matter of taste how creamy you prefer your porridge. Simply keep cooking until the oatmeal has reached the consistency you are looking for.

Tip: I recommend the traditional Scottish method of preparing porridge with water and a pinch of salt. Not only does this have fewer calories, you can also avoid some serious kitchen desasters. Water can not cook over like milk does, so you can avoid some serious burning into your cooking plates.

Arrange and serve

Pour the oatmeal into a bowl, sweeten with 1 tablespoon of honey or sugar and enjoy it with the topping of your choice.

Serving: 4 servings

1 cup rolled oats or steel-cut oats
Info: Every country has it's own type of oats. All are fine but have different cooking times.
3 cups water
1 tsbp honey or brown cane sugar
blackberry topping (optional)
1 handful blackberries
1 tbsp brown cane sugar
banana blueberry topping (optional)
1 banana
1 handful blueberries
apple cinammon topping (optional)
1 apple
1 tsp brown cane sugar
A knob of unsalted butter
Pinch of cinnamon

Instructions

  1. Bring the oats to simmer with the water and a pinch of salt over medium heat.
  2. Let the oats simmer gently and stir the porridge constantly with the handle of a wooden spoon. Depending on the type of oats, the cooking time is 5 - 30 minutes. Rolled oats need about 5 - 10 minutes while steel-cut oats can take 15 - 30 minutes to cook. Since oatmeal can be eaten at any level of cooking, it is a matter of taste how creamy or chewy you prefer your porridge. Simply cook the oatmeal until it has thickened and the consistency is the way you like it.
  3. Remove the oats from the heat and sweeten with 1 tablespoon of honey or brown cane sugar. If you want, you can now add some milk to taste.
  4. Pour the finished porridge into bowls and refine with one or more of the following toppings.
  5. Blackberry topping (optional): Put a handful of blackberries in a pan, press the berries down a bit so that the juice can escape and let boil for 1-2 minutes. If the berries are a little sour, you can add a teaspoon of brown cane sugar. Pour the blackberries over the porridge and allow to cool slightly.
  6. Blueberries and bananas (optional): Mash half of a ripe banana with a fork and mix it with the oatmeal. Slice the other half of the banana and put it on top of the porridge along with a handful of washed, fresh blueberries.
  7. Apple and cinnamon topping (optional): Dice an apple and fry it in a pan with a good piece of butter, a pinch of cinnamon and 1 tablespoon of brown cane sugar until the apple pieces have softened. Put the apple mixture on top of the porridge and let it cool down a bit.
